- BUTTER muffin pan

- COMBINE: flour, sugars, baking powder, cinnamon, and nutmeg

- In separate bowl STIR milk, egg, and butter into the oatmeal and BLEND well.

- COMBINE the two mixtures and mix well

- SPOON into each muffin cup, 2/3 full (maybe a smidge more)
- TOP with a few oats, just for prettiness :-)
- BAKE for about 20 minutes or until a toothpick comes out dry
Mix the eggs, shortening and brown sugar and add to the oatmeal mixture. In a medium sized bowl, combine flour, baking powder, soda and salt, then add to the oatmeal/buttermilk mixture. Hold mixing to a minimum, mix only until flour are wet. I added one cup of (drained and patted dry) freeze dried blueberries that I soaked in hot, unsweetened chai. The oats I used were "cinnamon roll" flavored.
