This is an update to my old coffee cookie recipe. Readers complained that their coffee flavor was too subtle. So, for these, I upped the flavor dramatically. In a separate bowl, mix the coffee powder, vanilla and egg yolks until the coffee is dissolved. Thoughoughly blend this into the butter/sugar mixture.
