- Crack the egg into a small, heatproof bowl and carefully lower into the water
- Poach the egg for approx 3 minutes (leave a minute longer if you prefer the yolk to be firmer rather than runny)
- Toast the bread and add a squeeze of lime to the mushroom mix before spooning onto the bread.
