Set a large Dutch oven over medium-high heat. When cool, crumble and set aside for garnish. In a large skillet, saute onions in butter until tender. Transfer to a paper towel-lined plate and let cool, then crumble.

- Add cheese slowly while whisking and then add the extremely minced bacon followed by salt and pepper to taste.
- Add the potatoes and drop the heat to simmer uncovered until potatoes are tender and soup has thickened (about 30 to 40 minutes) do not let it over boil and stir to ensure nothing sticks. serve and finish with cheese, chives and bacon.
How to Make Creamy Potato Soup: Place potatoes in a pot, cover with water, season with salt and cook until tender then drain. Melt butter in a large skillet over medium-high heat. Stir in bacon crumbles, reserved bacon drippings, flour, salt, and pepper. When done, the tip of a paring knife should go through the potatoes easily.
