- Beat the eggs and vanilla together. One way to add more sweetness to the recipe would be to add a bit of sugar to the egg. I did not do it though.
- Pour the eggs over the granola and pop it into the oven. Bake for 15 minutes or until the eggs are cooked all the way through.
- Cut yourself a nice big slice and eat!
Keep an eye on your frittata while it's cooking. Cooking times can vary widely depending on how many add-ins you've got, how hot they are going into the oven, and what kind of skillet you're using. In a medium bowl whisk together eggs, heavy cream, and mozzarella. Season with salt, pepper, and a pinch red pepper flakes. Serve cold, bring to room temperature, or reheat before serving.
