  2. Take 1 big onion sliced

  7. Take 1 tsp ginger garlic paste

  1. Cut boiled eggs into half, cover and keep aside.
  2. Heat a pan over medium heat and dry roast whole black pepper,cumin seeds,fennel seeds and coriander seeds until they turn light brown and aromat.
  3. Once done transfer roasted spices to clean bowl and allow them to cool completely.
  4. When spices are cooled down grind spices in to coarse powder and set aside to be used later.
  5. Heat oil in a pan or kadai add hing, mustard seeds and allow seeds to splutter.
  6. Now add onion,curry leaves, ginger-garlic paste and saute until onion becomes soft and translucent in colour.
  7. Add in chopped tomatoes and cook them until tomatoes turns soft and mushy.
  8. Add in turmeric powder, coriander powder, red chilli powder and salt. Fry them for few minutes to get them cook a bit to remove the raw smell.
  9. Now add coarsely ground spices to the onion tomato mixture. Fry over medium high flame for few minutes to brown them a bit. The masala will turn slightly dry when you keep frying them.
  10. Add in hard boiled eggs cut into half to the masala.
  11. Bring the flame to sim and gently toss the masala over the egg and cook for few minutes to coat the masala all over.
  12. Make sure to coat and cook them over low flame on either side of the egg.
  13. Mix it gently otherwise you may end up breaking the egg pieces.
  14. Serve it with rice or chapati .Enjoy
