- Prepare 4 boiled eggs
- Take 1 big onion sliced
- Prepare 1 medium size tomato chopped
- Get 2 tbsp cooking oil
- Get 8-10 curry leaves
- Take 1 tbsp mustard seeds
- Take 1 tsp ginger garlic paste
- Prepare 1/2 tsp turmeric powder
- Prepare 1/2 tsp coriander powder

- Prepare 2 tsp whole black pepper

It gives light crispiness and also reduces the spiciness of the dish a little bit. Also instead of rice flour, you can add gram flour also. Cut the boiled eggs into two and add it to the medium heated masala pan. Keep the flame on low and slowly roast the masala eggs.
Instructions to make Egg pepper fry:
- Cut boiled eggs into half, cover and keep aside.
- Heat a pan over medium heat and dry roast whole black pepper,cumin seeds,fennel seeds and coriander seeds until they turn light brown and aromat.
- Once done transfer roasted spices to clean bowl and allow them to cool completely.
- When spices are cooled down grind spices in to coarse powder and set aside to be used later.
- Heat oil in a pan or kadai add hing, mustard seeds and allow seeds to splutter.
- Now add onion,curry leaves, ginger-garlic paste and saute until onion becomes soft and translucent in colour.
- Add in chopped tomatoes and cook them until tomatoes turns soft and mushy.
- Add in turmeric powder, coriander powder, red chilli powder and salt. Fry them for few minutes to get them cook a bit to remove the raw smell.
- Now add coarsely ground spices to the onion tomato mixture. Fry over medium high flame for few minutes to brown them a bit. The masala will turn slightly dry when you keep frying them.
- Add in hard boiled eggs cut into half to the masala.
- Bring the flame to sim and gently toss the masala over the egg and cook for few minutes to coat the masala all over.
- Make sure to coat and cook them over low flame on either side of the egg.
- Mix it gently otherwise you may end up breaking the egg pieces.
