Steps to make Egusi pepper soup:
  1. Wash your fish. Blend Scotch bonnet, Cayenne pepper, onions and ginger together. Fry your Egusi in a dry pot and blend dry. Set them aside
  2. In a clean pot, put your washed fish. Pour in your blended pepper, egusi, pepper soup spices mix, 3 cubes of seasoning, little salt and pour water well above the fish level and place on fire to boil for 15mins. As it boils, it gets a bit thicker.
  3. Wash your scent leaves and pour into the boiling soup. Allow it to boil for another 5-10mins. You can serve with pounded yam, starch, eba or any swallow of your choice. I served mine with semo. Bon appetitè
