  6. Bring to boil.
  7. Lower to simmer and add rice and cook for 15 minutes.
  8. Add mixed veg and tomato paste and stir through for 5 minutes.
  9. Remove from heat and add red peppers. Stir through and allow to sit for 5 minutes before serving.

Again, once the veggies are cooked, spoon them off and save them for later. Add the diced roasted peppers, the stock or water, rice, and salt to taste. Season with freshly ground pepper, taste and adjust salt. This will add a lovely fragrance. Let the wine cook off almost completely and then pour the tomato and pepper paste.
