- Put diced yam and chopped sweet potatoes in a pot, add chicken stock and a cup of water(the water should top the yam and potato a little).
- Add grounded dry red pepper, mixed spice, chopped onions, curry, 1/2 teaspoon of salt to it, cover the pot and cook on medium heat.
- Grate tomatoes and red bell peppers together.
- Put 2 cooking spoon of vegetable oil in a fry pan to heat up, pour tomatoes and pepper into heated oil and stir. Add a pinch of salt and stir fry for 10minutes.
- After 20-25 minutes check if yam and sweet potatoes is tender, add the fried tomato pepper sauce, 2 chicken cubes of seasoning and stir with a wooden spoon(or wooden omorogun/turner).
- Leave to thicken for 4-5 minutes, taste for salt. Off your cooker and allow to cool before serving.
- Serve with fried chicken.
