Steps to make Auntie's steamed zebra cake:
- Put eggs, vanilla essence, salt and sugar in a mixing bowl, mix all ingredients using an electric mixer for 2 minutes, until all combined and form soft bubbles.
- Add in coconut milk and keep mixing.
- Add in flour slowly (batch by batch) whilst keep mixing the batter using electric mixer, until all well combined.
- Part the batter into two bowls (I am using 2 measuring jugs).
- Add in the cocoa powder in one of the jug (or bowl) and mixed well. I shifted the chocolate powder before adding to mixing bowl, so it's easier to blend with the batter. By now you will have 2 batter chocolate and white.
- Using medium size baking tray (16x22cm) lightly buttered and dusted with flour already. Add in the batter from the middle of the mold/baking tray (alternating between white batter and chocolate batter). If you doing it correctly your batter will look like a bullseye shooting target.
- Prepare the steamer (I am using a wok), wrap the lid of the steamer with tea towel to prevent water dropping to the cake.
- Wait until water is bubbling, put the cake tray/mold to the steamer, cover and cook for 30 mins. Cook on high heat if using steamer, cook on medium heat if using a wok like me, as the cake tray placed directly to the water when using a wok (you don't want to use high heat with this method as water might go into the cake).
- Do a test with a skewer. If stick come out clean, your cake is ready to be served. Make sure you put enough water in the steamer, your cake will be a fail if water runs out in the middle of steaming (assumed you didn't realise, it happened to me once). Keeping a consistent heat and steam is the key of success for this cake.
- Served your steam zebra cake warm with hot drinks. I am drinking my new favourite tea (chai masala tea). Recipe is here: https://cookpad.com/uk/recipes/12868381-masala-chai-tea?invite_token=2nY8nY99KkTVrcYVHchPv9TB&shared_at=1592369002
