- Take 1 onion, chopped
- Get 1/2 cup fresh cilantro chopped
- Prepare 1/2 cup fresh parsley chopped
- Get 5 tbsp salted butter
- Take 3 cup carrots chopped
- Get 3 medium turnips chopped
- Get 3 cloves of garlic, minced
Mash and season with butter and salt. Wash, top and tail the carrots (no need to peel); chop and put into a large pot. When turnip & carrot are ready, put both in one bowl or saucepan and mash them together. Or you can mash them separately (food processor can also be used) and then mix them together.

- Boil onion, carrot and turnip over medium high heat in a large pot until fork tender (I simmered mine for 3 hours on medium-low in a pot on the stove, you can do this quicker over medium-high heat for an hour give or take)
- Drain most of the water from the carrot and turnip, (you can do this over a container to reserve the sauce for other purposes such as soup stock or gravy)
- Add garlic, and butter to carrot and turnip mix, mash or hand-blend to desired consistency
- Stir in chopped parsley and cilantro
- Let sit for 5-10 mins. Serve and season with more butter, salt and pepper as desired
Carrots are very high in beta carotene. Coarsely mashing boiled carrots and rutabaga together with a little butter really highlights ingredients. The two vegetables will not fully incorporate into an orange mash but will instead create a beautiful mosaic in your serving dish. If you caught it, yes, I said rutabaga instead of turnips. It's a simple mash that I season with grated nutmeg and cayenne pepper.
