  3. Once chicken is cooked separate the meat into a bowl and put aside, stock can be made from the bones if you want but stock cubes work just as well. (I do have a chicken stock recipe if needed)
  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖

To make the soup, peel and/or trim the onion, leek, celery and carrots, then roughly chop along with the courgettes. The beauty of this soup is the fact that it is easy to include whatever you want to this mix of ingredients, depending on what you already have. I made this using veg stock and left out the chicken and celery, but the mix of herbs was really nice and everybody loved the soup.
