- First fry ginger, onions and garlic. Then add your veggies, you can use any veggies you have, but to keep it Moroccan I've used carrots aubergine and a red pepper
- After your veggies have softened, add tinned tomatoes, chicken, prunes, stock cube and olives. Then add your spices, for that real authentic taste, I would say saffron and parsley are a must. I also added tumeric, cumin and fresh coriander, but really you can add whatever you have in your cupboard, you could even buy a tagine mix from your local supermarket/shop
- When you've added all your ingredients leave to simmer for about an hour or transfer into a casserole and pop in the oven. Check occasionally and add water if needed. Serve with cous cous
