The ingredients needed to make Okra/Ladiesfinger/Vendaka Kara kulzhambu:
- Make ready 300 g ladies finger
- Get 2 tbspn oil
- Take 1 onion (chopped)
- Get 1 tomato (chopped)
- Get 1 green chilli (slit)
- Get 10 cloves garlic
- Take Tempering
- Get 5 tbspn gingely oil
- Prepare 1/2 tsp fenugreek seeds
- Make ready 1 tsp mustard seeds
- Prepare 1/2 tsp urad dal
- Get 2 spring curry leaves
- Take To grind
- Prepare 1 big onion
- Take 2 tomato
- Prepare 1 tsp cumin/jeera seeds
- Make ready Spices
- Prepare 1 tbspn red chilli powder
- Make ready 1/2 tsp Turmeric powder
- Prepare 2 tsp coriander powder
- Prepare 2 tsp mixed masala powder/ kuzhambu podi
- Get To soak
- Make ready Lemon size tamarind
- Take 2 cups water
- Prepare 1 tsp Jaggery
Cut the tip and tail and discard it. Vendakkai Kuzhambu, tender okra/lady's finger is simmered in tangy tamarind gravy. It is a South Indian Delicacy usually served with boiled white rice. In my home with the vendaikka kuzhambu, I like to serve fried appalam or appla kootu or potato paal curry.
Instructions to make Okra/Ladiesfinger/Vendaka Kara kulzhambu:
- Soak tamarind in water. Take the ingredients to grind in a blender and make a paste.
- Heat 2 tbspn oil in a pan, add ladiesfinger and roast for 5 minutes. Keep aside.
- In the same pan heat gingely oil, add fenugreek seeds, mustard seeds and urad dal.
- After mustard cracks add garlic, green chilli,curry leaves and onion. Saute till golden brown.
- Next add tomatoes and stir till it's mushy and then add the ground paste. Saute till raw smell disappears.
- Now add all the spices: turmeric, red chilli, coriander and mixed masala powders. Saute till oil separates from the sides.
- Extract the tamarind pulp strain and add to the kulzhambu. Add salt, cover and cook for 10 minutes.
- When it starts boiling add the ladies finger. Boil for 5 minutes and finally add jaggery. Mix well.
Okra is known as Vendakkai in Tamil and Bhindi in Hindi. Lady's finger is high fiber vegetable is known for its high soluble and insoluble fiber content.
