- Balsamic glaze:
- Add all ingredients to small sauce pan and bring to a boil. Reduce heat and reduce by half, stir constantly to avoid scalding/ burning on bottom of pan.
Stir together spinach, herbs, bread crumbs, and egg white in a medium bowl. Roll tenderloin up jelly-roll style, beginning at narrow end. Place meat on rack in a shallow roasting pan.
