The ingredients needed to make Vegi Casserole:
  1. Prepare 1 cup Spaghetti squash
  2. Take 1 cup Zucchini
  3. Take 1 cup Sweet potatoes
  4. Get 1 cup sliced mushrooms
  5. Take 14 oz Prego Italian Sauce
Instructions to make Vegi Casserole:
  1. Cut the spaghetti squash in half lengthwise. Microwave 1 half for 5-6 minutes. Julianne the zucchini and sweet potatoes while squash is in the microwave.
  2. Using a fork scrape out the inside of the squash. It will come out like strings if done correctly. Caution: very hot if not cooled off after microwaving.
  3. Salt and pepper to taste before cooking.
  4. Add all ingredients to a baking dish and cook in a preheated oven at 325°f for 15-20 minutes.
  5. I use a waterless cookware system so you may need a longer time. Also you might need to spray the dish so the vegetables don't stick and cover the dish with foil so they don't burn. Hope this helps!
