- Take 1 cup water

Instructions to make Quinoa salad:
- Cook the quinoa in a saucepan according to the instructions on the packet.
- Wash the onions and tomatoes. I'm in Portugal this week and was amazed by all the sizes and colours of the tomatoes in the market - couldn't resist buying one of each kind to try them all. These are just three of them, but any tomato is fine of course
- Put the quinoa in a bowl and squeeze the juice of the lime. Mix well.
- Add the chopped onions
- Chop and add the tomatoes. And finally add some oregano and the spoonful of olive oil. Mix well, taste, add salt and pepper accordingly.
- Put into a serving dish and enjoy :-)
