Add the squash, onion, garlic, chile, nutmeg and coarsely chopped sage; season with salt and pepper. Meanwhile, heat a large skillet over medium-high heat. Place squash shells on a baking sheet; fill with sausage mixture. Stir in the sun-dried tomatoes, thyme and garlic, then cook for an additional minute. In a large skillet with a lid, heat the olive oil, two turns of the pan, over medium-high.
