- Take Petai
- Prepare Small prawns
- Prepare Onions
- Get 2 tbsp Sambal belacan
- Get 1 tbsp soy sauce
- Prepare 1 tbsp sweet soy sauce
- Get 3 tbsp water
Put in petai at last and stir fry for less than minute. Brunei prawns is a wonderful dish, fresh with excellent flavor, served over coconut rice. It is quick and easy to make the tamarind paste adds a great sour flavor while the sugar and sesame oil adds a lovely sweetness. Petai (or stink bean) is one of the weirdest and stinkiest bean around, not for the faint hearted for sure.

- Cut petai into half and remove the inner seed. Wash clean in water. Boil the petai in a pot of hot water for 5 minutes to make it softer and set aside.
- Heat up 1 tbsp oil in wok and quick stir fry some prawns and set aside. You can marinate the prawns with salt, sugar and some pepper for 20 minutes before cooking.
- Heat up wok with 1 tbsp oil again and stir fry onions till aroma and put in the petai. Toss a few rounds and add in the prawns.
- Add soy sauce, sweet soy sauce and sambal. Stir fry a bit and add in some water and let it boil and simmer for 3 minutes. Ready to serve.
D Always half all petai since worms (and big fat ones too) seems to love digging inside the beans and stay there. Add the prawns and tamarind water and bring to a quick boil. Add the stink beans and season to taste with salt and sugar. Fry the prawns until they are cooked and the gravy is at the desired consistency and then serve at once. Mum's cooking is always the BEST! :).
